Warm Cocao Porridge

  • 400 mls coconut cream
  • 100mls water
  • 1 tsp vanilla extract or powder
  • 1 tsp cinnamon
  • 1/2 banana - chopped
  • 1 cup quinoa flakes
  • 2 tbs cocao
  • 1 tsp honey (optional)

Hello friend,

As we start to experience cooler days I immediately lean towards different foods, flavours and today I whipped up a warming cocao porridge.  I don’t use a heap of quinoa these days simply because it doesn’t sit all that well with me which is a shame as it’s nutrient profile is pretty good.  Anyway this porridge is a cheap alternative and can be great when you have friends over or even when you’re camping and cooking breakfast for a few.

Here’s how it rolled:

  • Pour the coconut cream into the saucepan on low heat.  Pour 100mls water into the empty cream, swill it around and add it to the saucepan
  • Add the vanilla, cinnamon, banana, honey (optional)
  • Allow to simmer for 3-4 minutes
  • Add the quinoa flakes and stir continuously until fully combined
  • Add the cocao and allow to simmer for couple of minutes until fully combined and porridge begins to thicken
  • Remove from the heat and set aside, top with some toasted nuts, chia or berries
