Beet & Kale Smoothie

  • handful beetroot - chopped
  • bunch kale - I used Lacinato Kale (also known as Dinosaur kale)
  • 400mls coconut cream
  • pinch himalayan salt
  • 1tbs chia seed - topping
  • handful ice

I love it when amazing produce is thrown together and the end product is yum.  This smoothie combines kale, coconut cream and beetroot.  I chucked some Himalayan salt in their too but you can add a little sweetner if you wish but to be honest I didn’t think it needs it.  The beetroot is sweet enough and creates the right balance and anyways, since when did smoothie have to be so good damn sweet!? I topped my with some chia seeds for an extra hit of health.

Throw everything into a blender and process for 30 seconds – maybe take a little longer than other smoothie simply because the beetroot is more fibrous.
