Ingredients

  • 2-3 medium avocados, sliced
  • 4 shallots, trimmed and sliced
  • 2 little gem lettuces, leaves trimmed
  • 1/4 bunch coriander, roughly chopped
  • 1/4 pepitas
  • 6 Thai basil leaves, roughly chopped
  • 4 tbs Nuoc Cham
  • 1 small red chilli, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tbs finely chopped ginger
  • 1 tbs fish sauce (gluten free)
  • 1 tbs honey
  • 2 limes - juice

Here’s how it rolled:

  1. In a large mixing bowl, combine all the ingredients for the salad and gently toss together.
  2. Add the Nuoc Cham (see below) dressing and lightly toss again.
  3. Season with salt and pepper, and serve.

Nuoc Cham (dressing)

  1. Combine all the ingredients and place in a small jar and shake vigorously
  2. Set aside until needed
