Ingredients
- 2-3 medium avocados, sliced
- 4 shallots, trimmed and sliced
- 2 little gem lettuces, leaves trimmed
- 1/4 bunch coriander, roughly chopped
- 1/4 pepitas
- 6 Thai basil leaves, roughly chopped
- 4 tbs Nuoc Cham
- 1 small red chilli, finely chopped
- 1 garlic clove, finely chopped
- 1 tbs finely chopped ginger
- 1 tbs fish sauce (gluten free)
- 1 tbs honey
- 2 limes - juice
Here’s how it rolled:
- In a large mixing bowl, combine all the ingredients for the salad and gently toss together.
- Add the Nuoc Cham (see below) dressing and lightly toss again.
- Season with salt and pepper, and serve.
Nuoc Cham (dressing)
- Combine all the ingredients and place in a small jar and shake vigorously
- Set aside until needed
