Ingredients
- 2 tsp shrimp paste
- 2 shallots – chopped
- 1 green mango - peeled and flesh julienned
- 1 red onion – sliced
- 350g cherry tomatoes – halved
- 1 long green chilli – deseeded and finely chopped
- 1 bird’s eye chilli – finely chopped
- 1 lime - juiced
- 1 tsp honey
- 1/4 bunch bunch coriander – leaves picked
- 1/4 bunch mint – leaves pick Method
Here’s how it rolled:
- Sauté the shrimp paste in a fry pan for 1 minute
- Remove from the heat
- Combine the lime juice, honey and shrimp paste in a small bowl – add more lime if needed
- Combine all the ingredients, including the dressing in a bowl and gently toss
- Season, serve and enjoy.
- Add some toasted peanuts if you wish
