Banana Bread
- 4 bananas
- 4 eggs
- 1/2 cup sweet potato flour
- 1 tsp cinnamon
- 1 tsp vanilla powder/extract
- 2 tbs almond butter/tahini
- 4 tbs butter
- 1 tsp baking soda
- pinch himalyan salt
Hello friends,
It was my son’s school fair on the weekend, unfortunately I was interstate but still managed to bake and donate a cake. Coming up with a recipe which fits the nut-free school policy and my dairy/grain free protocol is somewhat constraining but the end result was a delicious moist banana bread.
This is how it rolled:
- Pre-heat oven to 180 C
- In a large mixing bowl mash the bananas thoroughly
- Add all the remaining ingredients and combine
- Grease a small loaf-tin with coconut oil
- Pour in the banana bread dough and top with chia seeds
- Pop into the oven for 45 mins or until golden brown
- Remove from the oven and insert a knife to make sure its cooked through (knife will come out clean)
- Pop it out of the tin and allow to cool on a cooling rack for 15 mins
