  • large handful parsley
  • large handful basil
  • small handful mint
  • 1 garlic clove
  • 3 cornichorns
  • 1 tbs baby capers
  • splash apple cider vinegar
  • 3 anchovy fillets
  • 1 tsp lemon juice
  • 4-6 tbs olive oil
  • pinch sea salt

How are you?

I wanted to share with a very versatile accompaniment which can go with most proteins, including beef, chicken and white fish.

Salsa Verde is an Italian herbaceous (I love that word) dressing made with basil, mint and parley.  It has a capers, anchovies and garlic to give it flavour as well acidity from red wine vinegar or apple cider vinegar which makes it a perfect make with a fatty steak.

Give it a whirl – only take 2 mins to make and can really lift a dish.

How it rolled:

  1. Throw all the ingredients into a blender and process for 20-30 secs or until fully combined.
  2. Remove from the blender and store in airtight container
