Roasted Rosemary Macademias

  • 3 cups macademias
  • 3 tbs coconut oil
  • 1 sprig fresh rosemary
  • large pinch sea salt

There is nothing tricky about this recipes but the result is sensational. The only trick is to put them down once you start.  I actually threw these in the fry pan but the below is for the oven roasted version:

Here’s how it rolled:

  1. pre heat oven to 190C
  2. In a large mixing bowl combine the nuts with sprig on rosemary
  3. Add the coconut oil
  4. Season
  5. Mix well with your hands, ensuring the rosemary sprig gets broken up
  6. Line a bkaing tray with baking paper
  7. Pour in the nuts and spread out
  8. Pop in the oven
  9. Cook for 25 minutes, occasionally shaking the tray to move the nuts around
  10. Remove from the heat and allow to cool
  11. Season again if needs be
