Roasted Bone Marrow w Chimmichurri

  • 8-12 beef bones w marrow cut into section or lengthways
  • 2 tbs olive oil
  • sea salt
  • black pepper
  • 1/2 bunch fresh coriander
  • 1/2 bunch fresh parsley
  • 3-5 mint leaves
  • 1 green chilli
  • 5 tbs olive oil
  • 2 tbs red wine vinegar
  • sea salt
  • black pepper

Bone marrow is one of the most nutrient-dense foods on the planet – rich in omega 3 and DHA, but it’s not been included here purely for the nutritional benefits but for its texture and flavor. Ask your local butcher to help you find what you need. If you’re looking a delicious entrée or even a decadent snack then this recipe is the bomb.

If you’re new to bone marrow the texture can be a little odd but just like an oyster can be a little odd to begin with, you’ll soon become accustomed to it.

Foods rich in DHA are one of the reasons that humans evolved from scavengers on the African plains to hunters gatherers.  DHA and omega 3 allow our brains to grow in size and sophistication.

The acidic herbaceous chimmichurri helps to cut through the fattiness of the bone marrow.

Here’s how it rolled:

  1. Pre heat your oven to 220C
  2. Place your bones on a baking tray
  3. Drizzle with olive oil and season
  4. Thrown in the oven for 15 mins or until the bone begin to bubble
  5. Meanwhile thrown all the ingredients for the chimmichurri in a blender
  6. Blitz for 20 secs or until fully combined and remove from the jug
