Banana Bread

  • 4 bananas
  • 4 eggs
  • 1/2 cup sweet potato flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder/extract
  • 2 tbs almond butter/tahini
  • 4 tbs butter
  • 1 tsp baking soda
  • pinch himalyan salt

Hello friends,

It was my son’s school fair on the weekend, unfortunately I was interstate but still managed to bake and donate a cake.  Coming up with a recipe which fits the nut-free school policy and my dairy/grain free protocol is somewhat constraining but the end result was a delicious moist banana bread.

This is how it rolled:

  1. Pre-heat oven to 180 C
  2. In a large mixing bowl mash the bananas thoroughly
  3. Add all the remaining ingredients and combine
  4. Grease a small loaf-tin with coconut oil
  5. Pour in the banana bread dough and top with chia seeds
  6. Pop into the oven for 45 mins or until golden brown
  7. Remove from the oven and insert a knife to make sure its cooked through (knife will come out clean)
  8. Pop it out of the tin and allow to cool on a cooling rack for 15 mins
